Aquarius: I've used other meat cleavers and this is THE one for me. Excellent weight and balance and I just love how it feels in use in the kitchen. I can compare to similar knives used in Wusthof line (of which is also excellent but I like this specific cleaver best).
Beth DeRoos "Beth DeRoos from the California ...: For years I never owned a cleaver and then I saw Julia Child using one and a butcher friend recommend this one. It holds its tone or sharpened blade longer and I can whack a whole chicken and then use my boning knife and do the job in less than ten minutes. And this cleaver is great for quickly dicing vegetables for stir fry. The handle is a nice weight and the blade is designed to allow me to dice-rock at a nice speed. Like I said I never owned or thought I needed a cleaver, then I was proven wrong when I bought this one.
Carol Schlotterbeck: I bought this to cut out the back bone of a turkey. It worked great. Sharp and precise.
C. Mitchell: I've been using this mostly as a veggie slicer. I also use it on chickens or roasts. It has a nice weight to it and comes fairly sharp. It's not going to fit in a block, so the hook hole is nice to have.
C. Mitchell: I love Henckels International Classic knives. I've bought three full sets as gifts for my grown kids. I love that their knives are more than 84% of the weight of the Henckels Twin Professional S series made in Solingen, Germany (that's the hometown of Henckels and Wusthof). I love that the International Classic knives are properly forged and ground and finished in Spain using proper German steel and I'm glad that it is not like the TERRIBLE Henckels Fine Edge knives which are stamped out of Chinese junk metal in China.HOWEVER, I was shocked to discover that this cleaver is NOT AT ALL A CLEAVER! It is a knife-thin flat of metal which has been ground into a cleaver profile. My digital scale says it weighs a MERE 10.15 OUNCES instead of the 1-1/2 to 2-1/4 lbs of a proper cleaver. Sure, it looks GREAT ... until you get it out of the shipping package and find yourself holding a lightweight TOY instead of a real CLEAVER.Guess what World: Cleavers are heavy chopping tools for dismembering chickens and carcases and racks of ribs and so on. A series of only TEN blows should be required to fully dismember a chicken into the basic pieces for cooking. And while you are making these ten blows, your other hand is HOLDING the chicken carcase and flipping it for the next blow. Obviously, you want a tool which will hew in true and straight and not deflect toward your precious second hand. But I guarantee that this is EXACTLY the disaster which will happen to anyone foolish enough to use this TOY as a cleaver.Calling this a cleaver is the equivalent of calling a machete an axe. Who are you kidding, Henckels?
